Make Pesto Pasta + Chia Pudding with me!
When I have a little extra time before dinner these two things set me up for the next day really well.
Pesto Sauce
1 big bunch of Basil leaves
Handful of spinach (optional)
1/4 cup walnuts
1/3-1/2 cup olive oil
Juice of 1 lemon
1/4 teas. Sea salt
3-4 tbs nutritional yeast
1-3 cloves of garlic (raw or you can sauté it)
Season to taste
Start with walnuts first and blend in food processor, add the rest of the ingredients and 3-6 tbs of water to thin out as needed. Heat up and pour over pasta or veggies.

Chia Pudding
6 tbs chia seeds
1 1/2 cup plant milk
Small carton of coconut yogurt (about 1/2 cup)
Stir well and set in fridge for a few hour to overnight to thicken. Add maple syrup, fruit, superfood sprinkles and almond butter when you are ready to eat.
