What I ate today • when I was home 🧡 As the weath What I ate today • when I was home 🧡 As the weather begins to cool, I noticed that I’m craving more warming foods, especially in the morning. water with lemon English breakfast tea with coconut milk Spiced pear oat Spiced Matcha latte Salad with homemade tahini dress Holiday hash lentils with roasted seasonal vegetable vegetables Chocolate banana muffins When I’m home, I try to cook enough food for that day and for lunch the following day which usually includes a big pot of something, a dressing, and a nourishing sweet treat. 😊 #whatieatinaday #nourishyourbody #eathealthy #fallfoods
Taking care of yourself doesn’t have to be complic Taking care of yourself doesn’t have to be complicated. Sometimes all it takes is one really good pot of food. 🤌 These French Lentils might be the best lentil recipe I’ve made. Plant-based protein, fiber, comforting goodness, and leftovers that make tomorrow a little easier. I love them spooned over creamy mashed potatoes, but they’re also delicious with rice or roasted vegetables. THE RECIPE 3 tablespoons olive 1 onion finely chopped 2 cloves garlic finely chopped 1-2 carrots finely chopped 1-2 celery sticks finely chopped 2 ¼ cups French lentils 1 teaspoon dried or fresh thyme 3 bay leaves 1 tablespoon sea salt Place a large saucepan over medium heat and add oil. When hot, add chopped vegetables and sauté until softened about 5-10 minutes. Add 6 cups water, lentils, thyme, bay leaves and salt. Bring to a boil, then reduce to a fast simmer. Simmer lentils until they are tender and have absorbed most of the water 20-30 minutes. (I always cook longer). If necessary, drain any excess water (I keep it) after lentils have cooked. Serve immediately, or allow them to cool and reheat later. Serve them over creamy mashed potatoes for the ultimate cozy treat. Save this recipe for later.
